Potato Romanoff

Or as I like to lovingly call it...


Potato Romanov
















What you'll need (based on feeding three-four hungry people)

5 Large Russet Potatoes
1.5 cups sour cream (more or less to taste and consistency)
3 cups cheddar cheese
3 green onions
pepper
paprika



Instructions:
Preheat the oven to 375 degrees

Boil the potatoes for 20 minutes then rinse them with cold water to cool them.

Peel if desired.

With a cheese grater, shred the potatoes into what looks like uncooked hash browns.
Mix the potatoes, chopped green onions, two cups of cheese, a tbsp of pepper, and the sour cream together into a large bowl.

Spray your casserole dish with non-stick spray and layer the potato mixture evenly in it.

Cover with cheese and dust with paprika.

Bake in the oven, uncovered, for 25- 30 minutes.


And enjoy delicious artery clogging cheesy goodness.
